आयुर्वेद में तथा वेदो में बताया गया है, ‘आयु वे घृतं ’ – अर्थात घी से आयु बढती है, आयुष्य का संरक्षण जैसा घी से होता है, ऐसा किसी भी अन्य वस्तु से नहीं होता । घी का सम्पूर्ण कॉन्सेप्ट भारतीय है और Unique है इसी लिए आज तक कोई भी इसकी कॉपी नहीं कर पाया है । गाय के घी के गुणों के कारण इस से बहुत से विचारक प्रभावित हुए है । घी बनाने की वैदिक एवं आयुर्वेदिक पद्धति है । पहले स्वस्थ एवं वन में चरती गायों का दूध इकठ्ठा किया जाता है, बाद में अम्ल संस्कार यानी दधि मिलाकर मंथन क्रिया करके मक्खन निकालकर छाछ को अलग करके उसके बाद जो घी निकलता है, वो ही है ओर्गेनिक घी । संस्कृति आर्य गुरुकुलम्‍ ग्राम में स्थित होने के कारण चरती गाय का दूध एवं गव्य मिलन सुलभ है, तो ऐसे दूध द्वारा बिलोने से घी बनाते है, जो सर्वश्रेष्ठ कहा गया है ।
